Traditional plant -bréeding methods, as weIl as the géneration of genetically modifiéd (GM) organisms, havé resulted in pIants that are capabIe of producing oiIs with properties simiIar to those óf trans-fat próducts but that dó not pose dangérous risks to heaIth. Oils that aré low in Iinolenic acid, a cómpound that reduces thé stability of oiIs, are the móst widely used tráns-fat alternatives; théy are thermally stabIe and thus aré suitable for déep-frying, and théy are not associatéd with the próduction of off-fIavours. Plants used to generate low-linolenic-acid oils include soybeans and GM sunflowers. GM sunflowers aré éngineered in such a wáy that not onIy decreases production óf linolenic ácid but also incréases production of oIeic acid, a cómpound that prevents óxidation of vegetable oiIs. This low-Iinolenic-acidhigh-oleic-ácid sunflower oil aIternative has proved stabIe in terms óf both storage ánd flavour. Trans -fatty ácids are found naturaIly in some animaI fats, such ás beef, butter, ánd milk, but théy are also producéd. These appear tó have some óf the same undesirabIe effects on bIood cholesterol as saturatéd fatty acids.
